Cold start issues

Hello,
I'm a new user of Flashpro, with a euro civic fn2. I've had the car tuned by a professional tuning company but the car is quite jerky at low revs while cold. It was slightly jerky before the remap but now it makes it very hard to drive.
I was wondering if I could adjust the map slightly myself to fix these issues? I've spoken to the tuning company and sent a data log of the jerky behaviour, but he said "I've taken a look at the datalog and noted that although you open the throttle from 16 to 18% the throttle plate stays at 11%, even though the table value are around 6%! (See screen grab attached) I have experimented with increasing the numbers in the table to achieve better throttle response but have found that the car 'runs away'."
Does this mean my issues cannot be fixed (even though the stock map was fine)?
